Pondicherry (more recently known as Puducherry) used to be a French colony, and classic dishes of French heritage have evolved over the years to reflect the tastes of residents. This is an area famed for its fish and seafood and I love the gentle, coconutty backdrop of this broth, as well as how it accommodates aromatic lemongrass and chillies, plus zesty fresh ginger.

Chana dal with spinach

It’s usual to use chana dal for this dish, but you could also make it with split yellow peas. Both have a robust, almost meaty flavour, which stands up well to leafy green vegetables. Add the softened spinach at the last minute, so that it retains its fresh grassy-green colour. This dal is finished with a fried tarka flourish, made with sizzling spices, garlic, ginger and the sharpness of green chillies.

My dad loved salmon and in the last few years of his life he’d have lunch with me at home. ‘Fish on Fridays’ was a weekly ritual and this dish, with its sweet-sharp, citrus-rich marination, was one of his favourites. It’s quick to assemble, and I’d often serve it with potato vinaigrette and a leafy salad, but sometimes I’d flake the cooked salmon into buttery rice with plenty of chopped coriander.

Chicken in cumin & ground coriander yogurt

This is a simple and comforting curry made with everyday spices and simple ingredients. Because winters can be long and harsh for Himalayan hill and mountain communities, dried ginger rather than fresh is often the preference because of its long shelf life. It’s a spice that blends well with the earthy notes of toasted cumin and the astringency of ground coriander.

Lamb shanks with kashmiri chillies & garlic

I first tasted this dish, called laal maas, in Rajasthan, when the temperature outside was edging north of 48°C. Slow-cooked meat, cloaked in a soft tangle of buttery chillies and garlicky onions, isn’t for the faint-hearted - but this rich and indulgent recipe is utterly delicious and one of my all-time favourites. If you can, make it a day or two before you need it, so that the flavours have time to develop.
