When pasta is almost done, set aside 1 cup of the cooking water, then drain pasta and transfer to pan of anchovy sauce. Toss quickly until all the strands are well coated.
It arrived without anchovies but when I asked the waiter where the anchovies were he said the salad didn't actually contain them, just that it was served with an anchovy sauce. I checked the menu.
I must admit, Langans has my absolute favourite dish in the whole of London which is their spinach souffle with anchovy sauce - my mouth waters just thinking about it.
